The cold soaking of Cabernet Sauvignon is a technique used to enrich the colour, extract softer tannins and create complex flavours. The freshly crushed fruit is temperature modified and left on skins for some time before the fermentation commences. The palate is powerful displaying layers of dark berries combined with soft balanced tannins and nice subtle oak characters. The finish has great length and weight. A very versatile wine suited to many red meat cuisines including BBQ foods, pizzas and pastas as well as roasted duck. Neck, excellent labels
